Raspberries Stevia Coconut Or Almond Meal Chocolate Cake Torte Recipe

This recipe is delicious and wholesome and naturally sweetened

This deliciously rich and decadent raspberry and coconut chocolate torte contains only nourishing and nutrient rich ingredients. Its also incredibly moist in texture. Naturally sweetened with a little honey and raspberries, its base is made of coconut flour, (you can substitute almond flour for this recipe) making it free of gluten, dairy and refined sugar.

Coconut flour is very well priced and works fantastically as a flour alternative. This torte is fibre rich and so needs plenty of moisture, which is the reason for the copious amounts of eggs and fruit. Coconut and almond flour is available to buy at all good whole food and organic stores.

You can also use soaked pureed dates and applesauce mixed instead of raspberries for an extra sweet cake.

Raspberries Stevia Coconut Or Almond Meal Chocolate Cake Torte Recipe

Serves 8

Ingredients

• 1 cup frozen or fresh raspberries, apple sauce, pureed dates or fruit of your choice

• 1/4 cup honey

• 1/4 cup extra virgin coconut oil, or unsalted butter

• 5 eggs

• 1/2 cup coconut flour or almond flour

• 1/2 cup cocoa powder

• 1/2 tsp baking soda

• 1/2 tsp Stevia powder for extra sweetness

1. Preheat the oven to 150°C and grease or line a cake tin with baking paper.

2. In a small saucepan on low heat, melt together the extra virgin coconut oil, and honey. Allow to cool.

3. Add the fruit or dates to a food processor. Blend until smooth. Add the remaining ingredients, including the coconut oil and honey. Blend together until smooth.

4. Pour the batter in to the pre prepared cake tin. Bake in the oven for 25-30 minutes, or until a skewer comes out clean after insertion.

5. Leave to cool, before turning out on to a plate.

6. Delicious served with fresh cream, ice cream or natural yoghurt.

Healthy Ingredients

This recipe has no added sugar. But it's sweet, moist and so delicioso...

You can use either Almond flour or Coconut flour. It is fibre rich and contains lots of goodness.

You can also add dates, applesauce, peaches or any other fruit to this recipe.

For a sweeter cake, (hey you sweet tooths and chocolate lovers) add a teaspoon of stevia powder (it's all natural and VERY sweet) and a few chocolate chips or carob buttons for a tasty treat.

Make cupcakes for a party instead for a convenient and pretty way to eat this recipe.

  • 5 eggs, lightly whisked
  • 1/2 cup coconut or almond flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 cup carob or chocolate chips, optional
  • 1 teaspoon stevia powder, for a very rich sweet taste
  • few drops vanilla essence

Instructions

  1. Preheat the oven to 150°C and grease or line a cake tin with baking paper.
